  1. Pre heat your oven to 160 degrees centigrade on a fan oven
  2. Grease each mould with butter then dust with cocoa powder so each one is coated all round
  3. Place in fridge for 10 minutes
  4. In a bowl over a saucepan of hot water, melt the sugar, butter and dark chocolate until smooth
  5. Take off the heat and gradually beat in the eggs
  6. Add the flour and whisk till all is combined
  7. Pour into the moulds and refrigerate for 30 minutes
  8. Take out of the fridge and place on a baking tray and put into the centre of the oven for just 9 minutes
  9. Take out and leave for 2 minutes then run a knife round the inner edge to release the sponge. Tip up and place onto your serving dish.

Great news!

These can be frozen and saved for another day. Also, do not over bake! Normally they only need 9 minutes and this will give you a soft warm gooey chocolate middle but from frozen add an extra 5 minutes to the baking time.
